Summer is in full swing. After months of waiting the kids are out of school. We can now sleep late into the morning. Most days are spent at the beach enjoying the warm Florida sunshine. After a summer day of relaxing and making memories, I want to make an easy and light dinner. The last thing I want to do, is slave in the kitchen over a hot stove. Why make the air conditioner work any harder than it is already?
During summertime, my favorite quick dinner option is a summer salad. Greens mixed with fresh veggies I have on hand from my local farmers market. In a shift away from packaged salad dressing… I’ve started making my own healthier homemade version of ranch. My homemade dill dressing is light, tasty, and so easy to whip up in a few minutes flat!
My secret ingredient that makes my homemade dill dressing so light and tangy is… Stonyfield Organic Smooth & Creamy Lowfat Plain Yogurt.
Summer Salad With Homemade Dill Dressing Ingredients:
1 cup Stonyfield Organic Smooth & Creamy Lowfat Plain Yogurt
2 TBSP Fresh Dill Chopped
1 TBSP Local Honey
1/2 of a fresh lemon (juice only)
Blend all ingredients together. Serve immediately.
Feel free to utilize a wide variety of greens. I prefer spinach or romaine. Top your salad with a variety of colorful veggies. Yellow and orange peppers, red onion, juicy red tomatoes and green cucumbers make my summer salad a filling vegetarian meal that is easy on your grocery budget. When serving a salad, I always put the dressing on the side in an effort to refrain from over saturating the greens. Simply dip your fork in the dressing, then go in for a delicious bite of salad. This little step will save you calories and make each bite immensely flavorful as the homemade dill dressing highlights the earthy flavor of your summer salad.
