As part of the Shespeaks Blogger Society, I want to let you know about an opportunity to participate in Aetna’s Healthy Food Fight Contest.
Here’s how the contest works
Submit your Healthy Entree Recipe.
- Start with one of your own great healthy recipes.
- Select the region in which you want to compete.
- Register for the contest, and enter your recipe into our Healthy Recipe Analyzer to determine if it meets the nutritional requirements to be included in the voting for the semi-final cook-off. If your recipe receives a score of C+ or higher, it will be officially entered.
- Then spread the word to get your friends and fans to come vote
for your recipe when voting begins. Up to 48 people with the
highest-rated recipes will qualify to compete in person.
I entered in the Dallas region. This is my recipe for “Healthy Chicken Salad”. I scored an A- My recipe is very simple and easy to prepare.
Healthy Chicken Salad
1 pound boneless skinless chicken breast
1oz slivered almonds
1 green apple, julienned
1 cup red grapes, halved
1 teaspoon ground mustard
1/2- 3/4 Stonyfield Plain Greek Yogurt
Boil chicken approx. 20 minutes. After it cools, shred the cooked chicken and combine with the remaining ingredients. Serve in a lettuce cup, or make a sandwich on 100% Whole Wheat Bread!
I encourage you to submit your healthy recipe. Up to 48 semi-finalist in 4 regions with compete in person in front of a representative from The Culinary Institute of America and local VIP judges.
